Vegan Cheesecake. An Allergy Friendly Favorite.

Cheesecake is a staple dessert and snack in our family. When we first learned about allergies in our family we had to start thinking creatively with the recipes we love. We are excited to introduce our variant on cheesecake. We call it, “cheeseless cheesecake”, mostly because it is fun to say.

Our recipe is top eight free. One ingredient that we are super excited about is the Wayfare Brand Cream Cheese. We often experiment with different brands and flavors of products bought in store and we are pretty happy with the original flavor. If anything, we wish the containers were a little larger so they would last longer.

Is it delicious? Yes! Also, it was also a fun way to get the family involved and excited about trying new recipes.

To be honest, we did not get a picture of the final outcome of the recipe because as you can imagine it went fast, especially with the little ones. We will make within the next couple of weeks and post an edit for everyone to see.

Ingredients

  • 1¼ cup Sugar
  • 3-4 tbsp Cornstarch, depending on how stiff you want the cake to be. Be mindful that the more cornstarch you add to the recipe, the more your recipe will taste like cornstarch.
  • 1 tsp Lemon Juice
  • 2 tbsp Vanilla
  • 2 Tubs of Wayfare Original Cream Cheese
  • Pie Crust: We used pre-made pie crust for this recipe. We are huge fans of graham cracker crusts.

Note: You will need a measuring cup, tsp, tbsp, mixing spoon and mixing bowl.

Steps

  1. Combine all ingredients and place into pie crust.
  2. Pre heat oven to 350°F / 175°C.
  3. Once the oven is pre heated, place the cheesecake in the oven and cook for 8-10 minutes. It can’t hurt to take a look at 8 minutes to see if it needs more time of not.
  4. After 8-10 minutes, take the cheesecake out of the oven and let rest on a cooling rack for about 20 minutes.
  5. Ideally, leave the cheesecake in the refrigerator for 8+ hours or overnight.

Note: Our family [kids] became a little impatient with the overnight cooling step, but the wait is worth it. As you will find the 8+ hours allow the cheesecake to set and the consistency is much more inline with traditional cheesecake. Also, definitely add some toppings to your cheesecake. We love strawberries or blueberries as a topping.
